Abstract
The reported study on the method of hydrodynamic cleaning of fish from viscera was motivated by the current need of having more universal devices than the processing machines built so far. The research was carried out with two differently constructed terminal pieces, to which water and air were supplied. The tests proved the advisability of using a water-air stream. Good results have been obtained in gutting small fish using a pressure of 3 · 105 N/m2 for the water and 5 • 105 N/m2 for air, outlet opening diameter 0.006 m.
