Abstract
It was noted for the fishing season to effect the initial number of psychrophilic and psychrotrophic bacteria on the skin and within intestines of the Baltic herring. Number of proteolytic and lipolytic strains in the total count of cold tolerant bacteria was inversely proportional, both, for type of the sample tested and the fishing season. The multiplication rate was fastest and time for cold tolerant microbes to enter the Baltic herring′s tissue, while stored in ice at +4C, shorter for the fish caught in the spawning season.
